HOMEMADE FRESH PINEAPPLE ICE CREAM

Flavorful, handcrafted fresh pineapple ice cream without the use of any egg-based custard, created with just five ingredients.
It was cold this morning, and even the children wore jackets to school. However, by ten in the morning, the day was brilliant, sunny, and absolutely lovely. It was a very pleasant afternoon when I went to pick up my daughter from school.
As a family, we adore pineapple. We always have fruit on the kitchen table, so last weekend I decided why not make some homemade fresh pineapple ice cream?

I’ve had my favorite Haagen-Dazs brand’s pineapple coconut ice cream, but I’ve never had the opportunity to eat pineapple ice cream. I therefore had doubts about the result. I’m familiar with pineapple flavor, but I’m not sure how it would taste in ice cream.


My husband encouraged me to try it as usual; I recall his catchphrase, “If you don’t try it, how can you know the taste?” In terms of ice cream, my kids are the ultimate taste testers.
They begin sampling it as soon as I prepare the foundation, and my daughter likes to stand close to the ice cream maker and attempt to scoop it every three minutes to see if it is

Many of the recipes I discovered call for canned pineapple, but fresh pineapple has a natural combination of two proteases called bromelain (which breaks down proteins). You can read more about how well bromelain divides proteins here.
It will therefore provide an outcome that is different from what you had in mind if you use it straight as a fruit puree addition to heavy cream and half and half. Thus, I boiled the pineapple for 30 minutes over a low heat with ¼ cup sugar, which caused the enzymes to become denatured and lose their potency.

The cooked pineapple was pureed and combined with heavy cream, half-and-half, and milk when it had cooled. I didn’t use any eggs. After that, the mixture was left to cool for the entire night. The following day, I prepared the ice cream as directed by the maker.
It was a flavorful ice cream with a strong pineapple taste. I’ll try it again with eggs the next time to compare the flavors. To give it a pinacolada flavor, you may also add some toasted coconut or coconut milk in place of heavy cream.

There are countless options. My kids won’t like pineapple chunks, so I didn’t add any to the ice cream. Add the finely chopped chunks at the very end of the ice cream-making process if you wish to. Taste it; you’ll enjoy how much authentic pineapple taste there is in every serving.
I’m looking for fruit-flavored ice cream, so you can expect more delectable fruit-flavored ice creams and fruit combos. I also want to develop coffee ice cream.

INGREDIENTS

  • 2 cups freshly chopped pineapple
  • ¾ cup sugar
  • 1 cup heavy cream
  • 1 cup half and half*
  • ½ cup milk
  • * if you can’t find half and half: you can make 1 cup of half and half by mixing ½ cup heavy cream and ½ cup milk

INSTRUCTIONS

  1. In medium sauce bowl cook pineapple with ¼ cup sugar in a medium flame for 30 minutes.
  2. once it is cool enough to touch grind them into fine puree
  3. In a bowl add heavy cream, half and half and milk and rest of sugar and mix well. Make sure to dissolve the sugar completely.
  4. Add the pineapple puree to the cream, half-and-half, and milk combination. Refrigerate for at least two hours or overnight. I donated over night.
