Strawberry ice cream Cake: –

This semi-homemade strawberry ice cream Cake is prepared using Cool Whip, Golden Oreos, strawberry ice cream, and strawberry cake mix! It is incredibly tasty and ideal for anyone who enjoys strawberries!

Emma turned two this past week, and I wanted to make her a cake that truly reflected who she is. Strawberry kept coming up, and I’m so happy I decided to go with it. It is adorable and rosy, just like her! This Strawberry Ice Cream Cake is essentially a strawberry variant of my Funfetti Ice Cream Birthday Cake. It seems impressive because it uses cake mix, ice cream, and Cool Whip, but it’s very easy!

Easy Strawberry Ice Cream Cake

You can either create your own or use store-bought strawberry ice cream to top the cake. My favorite homemade strawberry ice cream is no churn, and it would be a perfect substitute. Whatever method you choose for the ice cream layer, top your ice cream cake with handmade whipped cream and garnish to your taste. For those who truly adore ice cream cakes, this dessert will be popular throughout the summer and even beyond!

I adore cakes of all kinds, including ice cream cakes. They are ideal for a variety of situations. Since so many people enjoy having cake and ice cream together, why not create a cake that has both? This cake accomplishes that goal as well, plus it has fresh strawberries for summer.

It’s also quite simple to follow this recipe for strawberry ice cream cake. It begins with my beloved Moist Vanilla Layer Cake, but for an 8-inch cake layer, the recipe is halved. It’s a great foundation for this ice cream cake. The cake layer has a strawberry filling on top of it. Although it might seem superfluous to take this extra step, I wanted to carry a bit.

Ingredients in Strawberry Ice Cream Cake

Strawberry Cake Mix:

Includes everything listed on the package needed to prepare the cake.

Strawberry Ice Cream:

Another option would be vanilla.

Golden Oreos:

You can also use any shortbread or golden sandwich biscuits.

Cool Whip:

Not everyone enjoys Cool Whip as much as I do. If you’d like, you can certainly prepare your own whipped topping!

Fresh Strawberries:

The cake is exceptionally attractive when the top is garnished with fresh strawberries.

How to Make Strawberry Ice Cream Cake

Even though this dish is incredibly easy, it does feel a little tiresome because it requires some hands-off time. This is because, in order to spread, the ice cream must thaw out entirely and then be re-frozen.

Make the cake.

First, make the strawberry cake mix using a medium bowl and rubber spatula or a stand mixer fitted with the paddle attachment, following the instructions on the package. Fill a 9-inch springform pan with batter, oil it, and bake for 40 to 45 minutes at 350 degrees Fahrenheit. The cake should be well baked and have a golden top. Let the cake cool fully, which should take two hours.

Thaw the ice cream slightly.

Take the ice cream out of the freezer after 90 minutes to allow it to defrost and become softened strawberry ice cream.

For two cake layers, place the cake on a pan and cut it in half horizontally. Reposition the sides of the pan with springform. Cover the bottom half of the cake with a thick layer of half of the softened ice cream, followed by the crushed Golden Oreo crumbs on top of the ice cream. Reposition the top half of the cake onto the cake after spreading the remaining half of the ice cream over the golden Oreos.

Freeze again.

After covering it with plastic wrap, place it in the freezer for a few hours At this stage, I prefer to place the cake on the serving plate or stand that I will be using to present it. Because the cake is frozen, transferring it is not too difficult.

Frost.

After spreading homemade whipped cream or Cool Whip on the cake, top with chopped strawberries and crushed cookie pieces. It’s now ready to be served right away. Refreeze it until you’re ready to serve it to avoid melting it if you won’t be serving it right away! To avoid freezer burn, make sure to cover it tightly once it has fully frozen.

Strawberry Ice Cream Cake Variations

There are so many different ways to make this cake! This strawberry variation is ideal for strawberry lovers. Use vanilla ice cream in place of strawberry ice cream if you can’t find any. Along with a range of ice cream flavors, you may use whatever kind of cake mix you’d want, such as chocolate, white, red velvet, and yellow cake mix! I’m dreaming about making it with salted caramel ice cream and chocolate cake mix. Yum!

Prep Ahead.

Start a day or two ahead of time to give yourself ample time to bake this cake. Starting a day or two ahead of time is the easiest way to ensure you have enough time, as there are a couple of parts where you have to freeze the entire cake.

No springform pan?

With cake pans, we can still make it work Bake the cakes in two 9-inch round pans that have been lined with parchment paper on the bottom to make removal of the cakes easier. Next, layer the cakes and ice cream according to the directions.

Leftovers

Remaining food can be kept in the freezer for up to two months if it is sealed tightly. This cake is so good that it won’t survive longer than that.
